Garlic Butter Pasta with Spinach and Cherry Tomatoes.

Ingredients:

  • 180g spaghetti or your favourite pasta
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnishing (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to the package instructions until al dente.
    • Reserve 1/2 cup of pasta water before draining the pasta.
  2. Prepare the Garlic Butter Sauce:
    • In a large skillet, heat the olive oil and butter over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
    • Add the spinach and cook until it wilts, about 1-2 minutes.
  3. Combine the Pasta and Sauce:
    • Add the drained pasta to the skillet with the garlic butter sauce.
    • Toss well to combine, adding a little pasta water if needed to achieve a creamy consistency.
    • Season with salt, pepper, and red pepper flakes (if using).
  4. Finish and Serve:
    • Sprinkle the grated Parmesan cheese over the pasta and toss again.
    • Garnish with fresh basil leaves if desired.
    • Serve immediately and enjoy your delicious dinner!
