Ingredients:
- 180g spaghetti or your favourite pasta
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnishing (optional)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Reserve 1/2 cup of pasta water before draining the pasta.
- Prepare the Garlic Butter Sauce:
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Add the spinach and cook until it wilts, about 1-2 minutes.
- Combine the Pasta and Sauce:
- Add the drained pasta to the skillet with the garlic butter sauce.
- Toss well to combine, adding a little pasta water if needed to achieve a creamy consistency.
- Season with salt, pepper, and red pepper flakes (if using).
- Finish and Serve:
- Sprinkle the grated Parmesan cheese over the pasta and toss again.
- Garnish with fresh basil leaves if desired.
- Serve immediately and enjoy your delicious dinner!
