Roasted Asparagus with Lemon and Parmesan.

Ingredients:

  • 1 bunch of asparagus (about 250g)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon, zested and juiced
  • 2 tbsp grated Parmesan cheese

Instructions:

  1. Prepare the Asparagus:
    • Preheat your oven to 200°C (180°C fan).
    • Trim the woody ends of the asparagus.
    • Place the asparagus on a baking sheet lined with parchment paper.
  2. Season the Asparagus:
    • Drizzle the olive oil over the asparagus.
    • Sprinkle with salt, pepper, and lemon zest.
    • Toss to coat evenly.
  3. Roast the Asparagus:
    • Place the baking sheet in the preheated oven.
    • Roast for 10-12 minutes, or until the asparagus is tender and slightly browned.
  4. Finish and Serve:
    • Remove the asparagus from the oven.
    • Squeeze fresh lemon juice over the asparagus.
    • Sprinkle with grated Parmesan cheese.
    • Serve immediately and enjoy your delicious side dish!
